Meatballs ... I am forever chasing the greatest meatball recipe.
At this point (after 4 decades of searching), I have still not found the best ingredients where I say "Wow, now this is a meatball!" I have configured every combination of beef, pork, veal and lamb. I have tried most spices available in the universe, and I am still chasing.
Perhaps, some day, lightning will strike and the magic will happen. Until then, I will just have to be satisfied with some of the very good recipes I have discovered along the way. I can tell you that, no matter what i come up with, a solid Cabernet Sauvignon is part of the formula.
