I discovered an absolutely delicious and flavorfull organic apple cider at the Jewel food store, recently. The brand is Organic -- muddy and cloudy and unfiltered. It's to die for (anyway, I think so). When I started making sorbets again, I was intent on trying to use this apple cider and, it occurred to me, it had to have a flavor of molasses. The only food I don't put molasses on is a pickle. I decided to use a dark brown sugar for the sweetener.
I thought the result was exciting. It has become one of my favorite flavor combinations. Try it. Fine tune it or allow your imagination to soar and experiment with other secondary, complimentary infusions into raw apple cider.

- 2-1/4 cups Organic Apple Cider1
- 3/4 cup Water
- 1/2 cup granulated Dark Brown Sugar2
- 2 tblsp. Fresh Lemon Juice
- 1 tblsp. Clover Honey

1 Brand: Organics - Unfiltered Apple Cider
2 Optional – Light brown sugar.

Syrup Base
- Combine water, lemon juice, honey and brown sugar;
- Stir while bringing to boil; Simmer for 3 minutes.
Sorbet Preparation
- Combine syrup base and apple cider;
- Cool to room temperature; refrigerate minimum 4 hours;
- Process in ice cream machine according to directions3, 4 ;
- Place into freezer proof container;
- Store in freezer for up to 5 days for best flavor.

3 Cuisinart ICE-70 Sorbet setting – 40 minutes
4 Initial Sorbet Temperature @ –10°F
4 Initial Volume: 800 ml (3-1/3 cups); Finish volume: 1.2 Liter
