I am currently obsessed with making a series of homemade apple sauces. This concoction is nectar from Adam & Eve's garden. Fresh Red Delicious, Granny Smith apples and sweetened dried cranberries, with a touch of raw honey from a local farm in Wisconsin. Oh, my ... have at it ... !

  • 1/4 cup water
  • 3 (13.4 oz. net weight) Red Delicious apples
  • 2 (8.3 oz. net weight) Granny Smith apples
  • 1/2 cup (1.2 oz.) Sweetened Dried Cranberries 1
  • 4 tblsp. raw honey 2
  • 1/8 tsp. salt

Notes: The weights of the apples reflect actual final bet weight after peeling and coring. Weights may change according to the size of your apples.

Preparation

  1. Peel, core and chop the apples into 3/4″ chunks. In a medium Dutch oven or a 3 to 4 Qt. stainless steel pot, combine the apple chunks, dried cranberries and water. Cover and bring the mixture to a low simmer over medium heat.
  2. Continue simmering, stirring frequently, until the apples and cranberries are tender and almost soft (do not overcook) ― about 15 minutes.
  3. Remove pot from the heat. For chunky applesauce, use a potato masher or the back of a sturdy spatula or wooden spoon to break it up to your desired consistency. For smooth applesauce, puree it with a hand immersion blender or in your food processor.
  4. Taste …
  5. Add honey. For sweeter applesauce, stir in more honey as desired.
  6. Let it cool uncovered for 30 minutes to room temperature before jarring the applesauce and storing in the refrigerator. Store in a glass mason jar or other sealed container.
  7. Applesauce will keep well in the refrigerator for about 1 week, or several months in the freezer.

Serve

  1. Serve warm or chilled.

Below are some ingredients that are typically added for an adventure of a life time. The quantities below are for a net 36 oz. portion of apples. Feel free to experiment as you wish. I will be adding specific recipes as I putter around myself with fruits from the gods..

  • 1/4 tsp. Salt
  • 1/2 tsp. ground cinnamon
  • 1 Star Anise Pod
  • 2 tsp. lemon juice
  • 1/4 tsp. nutmeg
  • 1/4 cup Brown Sugar
  • 1/2 tsp. Star Anise
  • Various apple / fruit combinations
  • Almond, Vanilla, Anise Extracts
  • Lemon or lime zest of one
  • Apple Cider, instead of water
