Oma's Vinaigrette Salad Dressing

My salad dressing likes are few. I primarily enjoy a simple vinaigrette. This was one of my mother's staples, and I make it for the holidays. It takes some time, but is very much enjoyed by the entire family.

- 1 lb. of fried bacon
- 1/3 Cup Bacon Fat
- 1/3 Cup Green Onions – Medium Chopped
- 1/3 Cup Yellow Onions – Medium Chopped
- 3/4 - Cup Water
- 1/4 Cup Organic Apple Cider Vinegar (Bragg, Organic)
- 1 Jigger Olive Oil – 1 Full Shot Glass
- 1 Jigger Dry Sherry Wine – 1 Full Shot Glass
- 1 Tblsp. Stone Ground or Dijon Mustard
- 1–1/2 Tsp. Sea Salt
- 1 Tblsp. Sugar
- 1/2 Tsp. Course Ground Black Pepper
- 3-4 Garlic Cloves – Medium Cut
- 1 Tblsp. Of fresh Basil – Dried

- 1 Lb.
- Fry bacon until golden brown
- Do not burn or allow bacon fat to smoke
- Lay and drain bacon on paper towel
- Let bacon cool and crisp
- Break desired amount of crisped bacon into small 3/8” size pieces
- Add dressing to salads and refrigerate
Mix all dressing ingredients in a large (4 cup) measuring cup or bowl.
